This is my go-to recipe. I always have the ingredients on hand and everyone loves it.
I posted this recipe almost 4 years ago. It's time to share it again!
Fill a large saucepan about 2/3 full of water. Place 4 whole chicken breasts or 8 tenderloins (I always use boneless skinless because I hate having to pull the meat off the bone, but use whatever you have on hand.)
Boil the chicken until it is completely cooked through. Mine took about 20 minutes.
Using a slotted spoon, remove the chicken and place it in a large bowl to cool.
To the same water and pot you cooked the chicken in, place 4 packs of chicken flavored Ramen Noodles. Do not add the sauce packets, just the noodles. Boil 3-5 minutes or until the noodles are tender.
While the noodles boil, shred the chicken. I like to use my hands but you could also use two forks.
Once the noodles are done, strain, and add them to the chicken.
Fill the same pot with about an inch of water and add 1 (16 oz) package of broccoli. Bring water to a boil (this will happen quickly). Turn down the heat to medium-low and cover with the lid. Allow the broccoli to steam, about 8-10 minutes.
While the broccoli steams, dump 2 cans of cream of chicken soup to a bowl.
Mix in 1 cup of milk
and the 4 seasoning packets left over from the noodles.
Once broccoli is tender, strain, and add to the noodle chicken mixture.
Now add the soup mixture to the chicken broccoli noodle mixture.
Sprinkle in 2 cup shredded cheddar cheese. And stir until everything is well incorporated.
Spoon into a 9x13" baking dish
Cover with foil and bake 30 minutes at 350 degrees.
CHICKEN BROCCOLI CASSEROLE
2 cups cooked, diced chicken
1 (16 oz.) package frozen broccoli, steamed
4 packages chicken flavored Top Ramen Noodles, cooked without seasoning packets
2 cans cream of chicken soup
1 cup milk
2 cups cheddar cheese, shredded
In a large bowl, combine chicken, broccoli, noodles, and 1 cup of cheese. In a smaller bowl combine soup, milk, and seasoning packets from the noodles. Add soup mixture to noodle-broccoli-chicken mixture and stir until evenly coated. Pour into a greased 9 x 13 inch baking dish, and sprinkle remaining cheese on top. Bake covered at 350 degrees for 30 minutes or until warmed through.
You can add breadcrumbs to the top of this casserole before baking. If you choose to do this, bake covered for 25 minutes and uncovered for another 10 or until bread crumbs are nice and golden.
