The next recipe on our Cookies for Santa list are these Chocolate Peppermint Melt-Away Cookies. They are so soft and delicious, they literally melt in your mouth.
They also use my favorite Candy Kiss of all time- the Candy Cane flavor. Have you tried these? I can't get enough of these.
Here's how you make these:
Begin by unwrapping and chopping a bad of Candy Cane kisses. Set these aside.
To a mixing bowl, add 1/2 cup oil
3/4 cup cocoa
4 tablespoons of softened butter
2 cups sugar
4 eggs
2 tablespoons of vanilla. Mix these ingredients together until you get a nice chocolate batter.
Then add 2 cups flour
2 teaspoons baking powder and a half teaspoon of salt
Mix these into the chocolate batter until incorporated.
Now mix in your chopped candy cane kisses. This is what adds a nice peppermint flavor and an awesome texture to your cookies.
Measure 1 cup of powdered sugar into a separate bowl.
Take a tablespoonful ball of cookie batter, it will be very soft and sticky, and drop it into the powdered sugar.
Make sure it's covered completely

Place cookies onto a lightly greased cookie sheet. Bake at 350 degrees for 8-9 minutes or until set. Be careful not to over bake these.
Once they are done baking you have several options, you can press a kiss into the center of each cookie

or you can chop up more kisses and sprinkle a generous amount on top of each cookie. Or you can leave them just as they are. My favorite is the kiss in the middle, but they're delicious any way.
CHOCOLATE PEPPERMINT MELT-AWAY COOKIES
1/2 cup oil
3/4 cup cocoa powder
4 tablespoons butter, softened
2 cups sugar
4 eggs
2 tablespoons vanilla
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1-2 bags of Candy Cane Kisses
Unwrap and chop one package of kisses; set aside. Cream oil, cocoa, butter, sugar, eggs, and vanilla together in a mixing bowl. Add flour, baking powder, and salt, mix until incorporated. Mix in chopped kisses. Drop rounded tablespoonful balls into 1 cup powdered sugar, cover completely with sugar. Place cookies on a lightly greased cookie sheet. Bake at 350 degrees for 8-9 minutes. Do not over bake. Leave plain, or top with an unwrapped kiss in the center, or sprinkle more chopped kisses generously on top of each cookie.
