Chicken Tortellini Alfredo

 Chicken, cheesy pasta, Alfredo sauce, and more cheese, who doesn't love that?
 First, pour a tablespoon of oil (I use canola) into a large skillet.
 Add 2 cups of diced uncooked chicken (I used about 8 tenderloins) and brown over medium heat until cooked thoroughly and golden brown.
 In a 9 x 13 inch baking dish, add the contents of one (19 oz) bag of frozen tortellini.
 Add the chicken, 
 2 cups of Alfredo Sauce (recipe or one 16 oz. jar of your favorite brand) 1-3/4 cups water, and 2 cups Mozzarella cheese.
 Cover with foil and place in a 375 degree oven.  I add a sheet of foil to the oven rack below just in case some of the sauce or cheese bubbles up and over the pan. 
 Cook for 40 minutes, then remove the foil and continue cooking for 20-25 minutes or until the cheese is golden brown.
 Serve with salad and garlic bread.

 
CHICKEN TORTELLINI ALFREDO
1 tablespoon oil
2 cups diced chicken breast (about 8 tenderloins), uncooked
1 (19 oz.) package frozen tortellini
2 cups Alfredo sauce (or a 16 oz. jar of your favorite)
1-3/4 cups water
2 cups Mozzarella cheese
 
In a large skillet, brown the diced chicken in the oil until thoroughly cooked throughout.  In a 9x13 inch baking dish add tortellini, chicken, Alfredo Sauce, and water.  Top with Mozzarella cheese.  Cover with foil and bake in a 375 degree oven for 40 minutes.  Remove foil and continue cooking 20-25 minutes or until cheese is golden brown.
