"Jamican Me Hungry" Banana Bread

10+ years ago, my brother served an LDS mission to Jamaica.  One of the families he met there sent him home with a loaf of this bread and the recipe.  It's very moist and not dry like a lot of banana bread recipes.  Try it and let me know what you think.


BANANA BREAD
1/4 lb. butter (1/2 cup)
 1 cup sugar
1 egg beaten
 3 large bananas, mashed
 2 cups flour
 2 tsp. baking powder
 1 tsp. baking soda
 1 tsp. cinnamon
 1/4 tsp. nutmeg
 pinch of salt
 ½ cup milk
 2 tsp. vanilla
 1/4 cup raisins 

1. Cream butter and sugar 2. Add egg to butter and sugar 3. Add mashed bananas and mix well 4. Sift flour, baking powder, baking soda, cinnamon, nutmeg, & salt 5. Add flour mixture to butter, sugar and egg mixture along with milk and vanilla. 6. Add raisins 7. Pour into greased pan and bake at 350 for 1 hour or until done.


Notes:  I sometimes omit the raisins and add chocolate chips, or add both!
