Chuck-A-Rama Carrot Cake

Those of you who live in the UT area are probably familiar with the Buffet Restaurant "Chuck-A-Rama". Their carrot cake is to die for. It is my Dad's favorite dessert. So in honor of Father's Day right around the corner, I give you

CHUCK-A-RAMA CARROT CAKE
1 1/2 cups sugar
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/3 cup walnuts, chopped
3/4 cup raisins
1/3 cup salad oil
2 eggs
1 tsp vanilla
3 1/4 cups carrots,shredded
Peel carrots and shred using a 1/16" shredder hole. Place first 7 ingredients in a large mixing bowl and mix by hand. Add all remaining ingredients and mix by hand until well blended. Place mix into a greased round 9" cake pan and bake 350 degrees for 45 minutes or until done. Let cool and frost with Cream Cheese Frosting.
Chuck-A-Rama's Cream Cheese Frosting
8 oz Cream Cheese
1 stick margarine
2 cups powdered sugar
2 tsp vanilla
Place first 2 ingredients in a bowl and beat until smooth. Scrape the bowl with a rubber spatula. Add remaining ingredients and beat until light and fluffy.

  1. I have wanted to try this recipe for a long time but was confused by the amount of cream cheese. Your recipe calls for 1/2 the amounts of the original recipe I found years ago and seems more reasonable. Also, is it really just 1 9" round? The picture makes it look taller
