SNICKERDOODLES

These would be a great cookie to take on your summer picnics. Crispy on the outside, soft and chewy on the inside, and lots of cinnamon and sugar goodness!
SNICKERDOODLE COOKIES
1 cup butter, softened
1 1/2 cups granulated sugar
2 eggs
3 cups all purpose flour
2 teaspoons cream of tarter
1 teaspoon baking soda
1/4 teaspoon salt

Cinnamon/Sugar Topping:
1/4 cup sugar
2 teaspoons ground cinnamon

Cream the sugar and butter until light and fluffy. Add in eggs. Add the flour, cream of tarter, salt, and baking soda. Mix until well incorporated. Mix together the 1/4 cup sugar and cinnamon. Shape in to 1 1/2 inch balls and roll in the cinnamon-sugar mixture. Place on a lightly greased baking sheet and bake at 350 degrees for about 10-12 minutes or until light and golden. Do not over bake!
