NO BAKE COOKIES AND THE WINNER IS. . ..

These are my favorite cookies to "bake" during the summer because you don't have to turn on your oven! (YAY cooler house!) The recipe for this is included in "Rachael's Favorite Summer Recipes" along with lots more easy recipes for the summer months.
NO BAKE COOKIES
2 cups sugar
3 tbs cocoa powder
1 stick butter
1/2 cup milk
Bring all ingredients to a boil in saucepan. Once mixture has reached a rolling boil you can't stir down. Boil and stir for 1 minute. Remove from heat and quickly add
1 tsp vanilla extract
1/2 cup peanut butter
3 cups oatmeal
Mix and drop onto waxed paper. Cool until set.

MOM'S HOMEMADE WHEAT BREAD & GIVE-AWAY

My mom has always made the best bread. I finally got her to share her secrets with me and now I'm sharing them with you. SHHHH, DON'T TELL HER!
Mom adds, dough enhancer, vital wheat gluten, and soy lecithin (these are the secret ingredients to moist yummy melt-in-your-mouth bread) if you don't have them or can't find them that's ok you can leave them out and still have yummy bread.
MOM'S HOMEMADE WHOLE WHEAT BREAD
2 cups lukewarm water
2 tbs yeast
1/2 cup honey
1/2 oats
3/4 tbs salt
1/4 cup vital wheat gluten
2 tbs soy lecithin
2 tbs dough enhancer
5+/- cups whole wheat flour
Mix water, yeast, and honey together. Add oats, salt, wheat gluten, soy lecithin, and dough enhancer. Mix until smooth. Add flour a cup at a time until dough forms. Knead 15 minutes. Shape into loaves and let rise until double. Bake 350 degrees for 30 minutes or until done.
NOTES: We (as in Mom and I) do not do a double rise (letting the dough rise and then shaping the loaves and letting it rise again) but you are welcome to try it.
