Oriental Chicken Salad with Mango MAKEOVER

I've played around with it and recreated it to be even healthier.  I omitted the Chinese noodles, and I also got rid of the sugar in the dressing while still keeping the sweet, tangy Asian flavors.  After all, that's what makes it so good!

Healthy Chicken Salad with Mango

Lettuce, chopped
cabbage (red or green), chopped
mangos, cubed
red bell pepper, diced
cucumber, cubed
grilled chicken, diced
sliced almonds, toasted

Toss all ingredients together top with dressing.

Oriental Dressing
1 cup oil
4 dates
1/4 cup liquid coconut aminos or soy sauce
1 teaspoon salt
1 cup rice vinegar
2 teaspoons sesame oil
2 garlic cloves, minced

In a small bowl, soak dates for a few minutes in warm water.  Drain the water, remove the pit, and mash them with a fork. Combine dates and remaining ingredients into a blender.  Blend until smooth.
