Fudge Frosting

Fudge Frosting

1 cup chocolate chips
(milk chocolate, semisweet, bittersweet, your favorite)
1/4 cup milk
2 tablespoons butter
1/2 teaspoon vanilla extract
1 cup powdered sugar

Combine chips, milk, butter, and vanilla on microwave-safe bowl.  Microwave on high 30-40 seconds.  Remove and stir until chocolate chips melt and mixture is smooth.  (You may need to return to the microwave for a few more seconds.)  Add powdered sugar and whisk until smooth.
Frost while it's still warm.  If it starts to thicken, rewarm it in the microwave for a few seconds.

Yields:  Enough frosting for a thin layer on a 9 x 13.  Double the recipe if you want a thicker layer of frosting.

STEP-BY-STEP
 Into a microwave-safe bowl, combine 1 cup chocolate chips (I used semi-sweet)
1/4 cup milk (you can use evaporated, almond, regular)
and 2 tablespoons of butter and 1/2 teaspoon vanilla extract
Microwave on HIGH 30-40 seconds.  Remove and stir until smooth.  You may have to microwave the mixture again for a few more seconds.
Add 1 cup powdered sugar.  Whisk, whisk, whisk until the frosting is nice and smooth.
Quickly frost while it's warm.

The cake pictured above is a Wacky Cake.  You can find the recipe HERE.
