20 minute meal- Chicken Bacon Ranch Quesadillas

Sometimes life is busy, really busy and you don't have a lot of time to devote to dinner (or you just don't want to devote a lot of time to making dinner).  Quesadillas are one of my go-to quick and easy meals for when I don't have a lot of time (or I'm feeling lazy).  There are 1000 ways you can make a quesdalilla but this way is one of my favorites (probably because it involves bacon).
Chicken Bacon Ranch Quesadillas

2 boneless, skinless chicken breasts
6 slices of bacon
2 cups shredded cheddar cheese (or flavor of your choice)
1 package flour tortillas
Bottle of your favorite Ranch Dressing

In a medium saucepan filled with water, boil chicken breasts until thoroughly cooked through.  While chicken is boiling, in a frying pan, fry bacon until crispy.  Once chicken and bacon are cooked, cut both into bite-sized pieces.  To assemble: on a buttered grill, place one tortilla.  On the top side, spread ranch dressing then top with crumbled bacon, diced chicken, cheese, and more ranch.  Place a second tortilla on top.
Once the bottom tortilla is nice and golden brown, flip the quesadilla over; cook until golden brown.  Remove from pan.  Cut into pieces.
Serve with a side of ranch dressing for dipping.

STEP-BY-STEP
Fill a medium saucepan with water.  Add chicken and bring to a boil.  While the chicken is boiling away,
In a large fry pan, fry bacon until crispy.
While the chicken and bacon are cooking, quickly shred your cheese (if not using packaged shredded cheese).
Once chicken and bacon are completely cooked, dice them into bite-size pieces.
 To Assemble:
I like to use a large griddle because I can cook two at a time.
Butter the grill and place a tortilla (or two) down.  Spread the tortilla with ranch dressing
Top with bacon, chicken, cheese, and more ranch dressing.  Top with another tortilla.
Once the bottom tortilla is golden brown, flip the quesadilla over now browning the top side.

Remove from grill and cut into pieces.
