After looking through my recipe drawer and seeing a recipe for cranberry orange muffins, I thought "Mmmm that would be really good as a cookie". And sure enough, it is!
White Chocolate Orange Cranberry Cookies
In a bowl place 1/2 cup shortening and 1/4 cup softened butter.
Add 1/2 cup granulated sugar and
a packed 3/4 cup brown sugar.
Cream all this together until well incorporated.
Add 2 eggs
1 tablespoon of vanilla extract
2 tablespoons of orange rind
and 2 tablespoons of orange juice. Mix well.
Now add 1-1/2 cups all-purpose flour
and 1/4 cup whole wheat flour (you can just do regular all-purpose flour if you don't have any whole wheat and it will still turn out fine).
and 3/4 teaspoon baking soda and 1 teaspoon salt. Mix until just incorporated.
Stir in 3/4 cup dried cranberries and
1 cup white chocolate chips. Drop by rounded tablespoonfuls onto slightly greased baking sheet. Bake at 375 degrees for 9-11 minutes or until edges are slightly brown.
Wouldn't these be great to serve at a brunch!

Stir in dried cranberries and white chocolate chips. Drop by rounded tablespoonfuls onto lightly greased baking sheet. Bake at 375 degrees 9-11 minutes or until edges are slightly browned.
