Broccoli Cheese Soup

This is probably my favorite soup.   It is so delicious! I think I also like it because its quick to throw together and we usually always have broccoli in the freezer and cheese in the fridge.
Broccoli Cheese Soup
In a large saucepan filled with a small amount of water (about 1 inch or so) dump 2 (10 oz) packages of frozen chopped broccoli.  Cover and cook on high 8-10 minutes or until broccoli is tender.  Strain, removing the excess water.
 Chop 1/2 an onion.  Add chopped onion to 3 tablespoons of butter melted in the bottom of a large soup pot.  Cook onion until clear.
 Now stir in 3 tablespoons of flour.
 Let the flour brown just for a minute (we're making a roux)
 before slowly adding  2 cups chicken broth
 and 2 cups of whole milk.  Stir until slightly thickened.
 Now add 1 teaspoon of salt
1/4 teaspoon of ground nutmeg
 and the cooked broccoli.
 Mix it all together.
 Just before serving, stir in 1 cup grated cheddar cheese or whatever cheese you like.
 Makes 6 servings and that makes 6 happy people!

2 (10 oz) packages of frozen chopped broccoli
3 tablespoons butter
1/4 cup diced onion
3 tablespoons flour
2 cups chicken broth
2 cups whole milk
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup grated cheese

Cook broccoli in small amount of water till tender.  Strain to remove excess water.  In a large soup pot, melt butter.  Add onion and cook until clear.  Stir in flour to make a roux; slowly add broth and milk.  Stir until slightly thickened.  Add salt, ground nutmeg, and cooked broccoli.  Add cheese just before serving.
