Saltine Toffee

This is one of the things I made for Cookie Day this year.  It's really a just an easier way to make English Toffee, a shortcut.
Start by preheating your oven to 400 degrees.
Then, lay saltine crackers on a cookie sheet lined with aluminum foil.
In a medium saucepan, bring 1 cup of butter and
1 cup of brown sugar to a boil.
Once it has reached a full rolling boil (a boil that doesn't stop when stirred), boil and stir for three minutes.
Pour mixture over the crackers.  Bake for 7 minutes.
Remove from the oven and immediately sprinkle with 1 (12 oz.) package of chocolate chips.
Once chips have "melted" use an offset spatula or a knife to spread the chocolate.
Let the toffee cook and then break into pieces.
