HEAVENLY LEMON BARS


I love me a good Lemon Bar!  I've tried a lot of recipes.  Finally I tweaked a crust recipe and a different filling recipe, put it all together and 'ta-da' HEAVEN was made.

HEAVENLY LEMON BARS
Crust
2 cups flour
1/2 cup powdered sugar
1 cup butter (not margarine), softened

Combine all 3 ingredients and press into a greased 9x13" baking dish.  Bake at 350 degrees for 20-25 minutes, or until just barely browned (do not over bake, you will be baking the crust again), let cool.

Filling
4 eggs, beaten
2 cups sugar
grated rind from 2 lemons
8 tbs lemon juice
4 tbs flour
1/2 tsp baking powder

Mix all ingredients together, pour over cooled crust.  Bake at 350 for 25 minutes or until set. It may take a little longer.  (Keep wiggling the pan every 3-5 minutes until lemon bars no longer move.)

Dust with powdered sugar.  Let cool completely, cut, serve, and enjoy!!!  MMMmm. Heaven
