PORK TENDERLOIN WITH HONEY BUTTER

PORK TENDERLION WITH HONEY BUTTER
4 T butter
2 T honey
1-1/2 pounds pork tenderloin, trimmed,
thin end folded up and tied
salt and pepper
1/4 C water
Preheat oven to 375. In an ovenproof skillet, heat the butter and honey over medium-low heat, stirring to melt butter. Season the pork with salt and pepper and place in pan. Cook until lightly browned on all sides, about 10 minutes. Reduce heat if honey begins to burn. Transfer to oven, and roast until pork is cooked thoroughly, 15 minutes. Transfer to a plate. Add water to pan, and place on stove over med heat, cook stirring with a wooden spoon to scrape up all the browned bits. Simmer until sauce is reduced to about ½ cup. Slice pork on diagonal, and serve drizzled with sauce.
NOTES: If you don't have an oven-proof skillet, you can just wrap aluminum foil around the handle and it usually works just fine. I've used this recipe with pork chops too. YUM!
