Blackberry Pie Bars


Everyone raves about these bars and say they are similar to a lemon bar but with blackberry instead of lemon.  I'm telling you these bars are addictive.  You just keep coming back for more.
I've made these twice in the last month and each time I've forgotten to take pictures.  UGH!  Next time (and there will be a next time), I will take pictures.  Until then, just the recipe will have to do (sorry). 

Blackberry Pie Bars

CRUST:
1-1/2 cups flour
3/4 cup sugar
pinch of salt
3/4 cup (1-1/2 sticks) unsalted very cold butter, cut into chunks

FILLING:
2 large eggs
1 cup sugar
1/2 cup sour cream
1/4 cup plus 2 tablespoons flour
pinch of salt
16 oz blackberries (I used fresh but you can use thawed frozen too)

Preheat oven to 350 degrees. Line an 8x8 inch baking pan with foil; spray with cooking spray.
Make the crust by mixing the flour, sugar and salt together and then cutting in the butter until the pieces are the size of peas.  This can easily be done in a food processor. Remove 3/4 cup of mixture to use as topping.  Pour the remaining crumb mixture into pan and press evenly into the bottom and up the sides.  Bake for 15 minutes.  Make the filling by mixing the eggs, sugar, sour cream flour and salt until well combined.  Spread the berries in a single layer in the bottom of the crust.  Spoon the filling batter over the berries.  Evenly sprinkle the reserved crumb mixture on top of the filling.  Bake 45-55 minutes until the filling is just beginning to turn golden brown and is set.  Cool completely before cutting. 

Note: Last time I made these, I mixed the filling and then gently folded the berries into it.  This kind of broke up the berries a little bit and made these bars more "lemon bar like".  Either way is delicious!
