Creamy Tomatillo Ranch Dressing

This dressing is similar to the one served at Cafe Rio.  It goes well on salad, like a regular salad dressing, or  you can use it as a sauce on your Mexican dish -burritos, tacos, enchiladas, etc.  It's keep well in the refrigerator for a couple weeks.

Creamy Tomatillo Ranch Dressing

1 (1 oz.) package Hidden Valley Ranch Dressing Mix
1 cup buttermilk
1 cup mayonnaise
1 large or 2 small tomatillos, peel the husk off
1 clove garlic, minced
1/2 bunch cilantro, chopped
1.2 teaspoon lime juice
1/2 to 1 small jalapeno, seeds and ribs removed*

Blend all ingredients together in a blender.  Store in the refrigerator.  The dressing will get spicier the longer it sits.

*Notes- The heat of a jalapeno is in the seeds and ribs.  If you like spicy and can handle the heat, add these.
