I love dinners that require only one pan. One pan means less time washing dishes and that means more time to do something fun! This dish is something my mom use to make when I was growing up. Sometimes she'd use chicken, other times she would used pork chops. Both ways are good.
One Dish Chicken and Rice
2 cups of uncooked rice
6 boneless, skinless chicken breasts (or 12 tenderloins)
1 can cream of mushroom or chicken soup
1 packet onion soup mix
4 cups water
Add rice to the bottom of a 9 x 13" baking dish. Place chicken breasts on top of rice. In a large bowl, mix soup, soup mix, and water together. Pour on top of chicken and rice. Cover with foil. Bake at 350 degrees for 1-1/2 - 2 hours or until chicken is fully cooked and rice is tender.
STEP-BY-STEP
Pour two cups of rice into the bottom of a baking dish
top with 12 tenderloins or 6 boneless skinless breasts.
In a large bowl, mix together one can cream of mushroom or chicken soup
1 packet of onion soup mix
and 4 cups of water.
Pour this over the chicken and rice.
Like so. . .
Cover the dish with foil and bake for 1-1/2 to 2 hours at 350 degrees. You want to make sure the chicken is fully cooked through and the rice is soft and tender.
Yum.
NOTE: You can substitute pork chops for the chicken.
