Mini Banana Muffins


When you're bananas start to look like this,don't throw them out!
Make them into delicious mini banana muffins.
Mini Banana Muffins

1/4 lb. butter (1/2 cup)
 1 cup sugar
1 egg beaten
 3 large bananas, mashed
 2 cups flour
 2 tsp. baking powder
 1 tsp. baking soda
 1 tsp. cinnamon
 1/4 tsp. nutmeg
 pinch of salt
 ½ cup milk
 2 tsp. vanilla
 1/4 cup raisins (see notes)

1. Cream butter and sugar 
2. Add egg to butter and sugar 
3. Add mashed bananas and mix well 
4. Sift flour, baking powder, baking soda, cinnamon, nutmeg, & salt 
5. Add flour mixture to butter, sugar and egg mixture alternating with milk and vanilla. 
6. Add raisins 
7. Pour into greased muffin tin and bake at 350 for 10-12 minutes or until done.


Notes:  I sometimes I'll substitute the raisins for chocolate chips or/and nuts, or I'll add all three!

STEP-BY-STEP:
 To a large bowl, add 1 stick (1/2 cup) of softened butter.
  Add 1 cup of sugar, and cream until light and fluffy.
 Add 1 egg
 and 3 mashed bananas.  Mix well.
 In a separate bowl, sift together the dry ingredients:
 2 cups of flour 
 2 teaspoons of baking powder
1 teaspoon of baking soda
 1 teaspoon of cinnamon
 1/4 teaspoon of nutmeg
and a pinch of salt
 Did you know you can use a whisk to sift them?
 In a small bowl, I'm using my measuring cup, mix 1/2 cup milk
 with 2 teaspoons vanilla extract.
 Now we're going to mix everything together. 
With your mixer on low, add half the flour mixture to the banana mixture
 and half the milk mixture.  Now repeat until everything is mixed all together.
Mix until just combined.  Do not over mix!
 Scoop into greased muffin tins.
Bake 10-12 minutes at 350 degrees.
 Until golden brown.
