I served these Twice Baked Potatoes for dinner on Super Bowl Sunday. I added bacon and green onions to make them more like potato skins. They were a big hit!
Twice Baked Potatoes
6 potaoes
1/4 cup butter
4 tablespoons milk
1/4 cup sour cream
1/4 teaspoon salt
1 cup shredded cheddar cheese
3 pieces bacon, cooked and crumbled (optional)
1 green onion, sliced (optional)
Scrub potatoes, and wrap in foil. Bake at 350 degrees for 1 to 1-1/2 hours until potatoes are tender when squeezed gently. Tutorial Here
Let potatoes cool slightly until easy to handle. Cut potatoes in half lengthwise. Carefully scoop our insides leaving 1/4-inch around skin. Add butter, salt, sour cream, cheese, and milk to potatoes; mash until smooth. Fill potato shells with mashed mixture. Place in baking dish. Sprinkle bacon and chopped green onions on top. Bake in a 350 degree oven for 15-20 minutes.

After they are cool enough to handle, cut potatoes in half lengthwise.
Carefully scoop out the insides, leaving 1/4-inch around skin.
Add 1/4 cup butter

Mash until smooth
Fill potato shells with mashed mixture. You can stop right here and bake these as is, or
Sprinkle with cooked chopped bacon, and green onions.
