Homemade Oreo Sandwich Cookies

O-R-E-Os are my favorite store-bought cookie. Here is a "homemade" version, which tastes nothing like the real cookie, but they are delicious in their own way.  These are one of my favorite homemade cookies to make and eat.

HOMEMADE OREOS

2 boxes Devils Food Cake Mix
4 eggs
3/4 cup butter, melted
1 can vanilla frosting (or make your own- see recipe below)

Mix together cake mix, eggs, and butter. Roll dough into 1 inch balls, and place onto a cookie sheet. Bake 375 degrees for 8 minutes. Do not overbake. Allow to cool for 2 minutes before removing to a wire rack. Cool completely. Once cool, Sandwich 2 cookies together with a tablespoon of frosting.

STEP-BY-STEP
Dump 2 packages of Devil's Food cake mix in to the bowl of a mixer.
Add 4 eggs
and the melted butter.  Mix until completely combined.
I use my tablespoon scoop to scoop out the dough
into balls like this.
Then I divide each ball in half 
then I roll each half into a nice smooth ball.  Place balls onto a cookie sheet.
Bake for 8 minutes in a 375 degree oven.
The cookies will be really fluffy when they first come out of the oven but they will flatten as they cool.
Let the cookies cool for 2 minutes before removing to a wire rack to finish cooling completely.
Use a can of frosting to sandwich the cookies together or you can easily make your own
 FROSTING:
In a mixing bowl, add 2 tablespoons of butter flavored shortening, and 2 tablespoons of room temperature butter.  Using the whisk attachment of your mixer or hand beaters, cream the shortening and butter together.
Add 1 teaspoon of vanilla
a tablespoon of milk
and 2 cups of powdered sugar.
Beat until creamy.  You can add more milk or vanilla to make the consistency thinner, if needed.
To sandwich the cookies, place a dollop of frosting (about a tablespoons or so) on the bottom of a cookie.
Place another cookie on top to sandwich them together.
This recipe makes about 3 dozen cookies depending on what size you roll your cookie balls.
