Rolo Cookies

These cookies are always a special treat at our house.

= Heaven.
Rolo Cookies
1 cup butter
1 cup plus 1/4 cup sugar, divided
1 cup brown sugar
2 teaspoons vanilla
2 eggs
2-1/2 cups flour
3/4 cup cocoa powder
1 teaspoon baking soda
1 cup chopped pecan (optional)
40 chocolate caramel candies (Rolo)
 
In a large bowl, cream butter, 1 cup sugar, and brown sugar until fluffy.  Add vanilla and eggs, beat well.  Add flour, cocoa powder, and baking soda.  Stir in 1/2 cup chopped pecans Shape 1 tablespoon of dough around one candy, covering it completely.  In a separate bowl, combine remaining pecans (optional) and 1/4 cup sugar.  Roll cookies balls in mixture.  Place on a lightly greased cookie sheet.  Bake at 350 degrees for 9 minutes. 
 
Yields: 40 cookies
 
STEP-BY-STEP
 In the bowl of a mixer place 1 cup of butter,
 1 cup of sugar
 and 1 cup of brown sugar.
 Beat until fluffy.
 Add 2 eggs
 and 2 teaspoons of vanilla.  Mix well.
 Now add 2-1/2 cups of flour
 3/4 cup cocoa powder
 and 1 teaspoon of baking soda.  Mix until incorporated.
If you are adding pecans to your, you'll mix them in now.
(I'm allergic to tree nuts so I've chosen to omit them.)
 Is your mouth watering yet?
 Get your Rolos ready
 and your sugar/pecan topping
again I've omitted the nuts.
 Grab a tablespoon of dough and place a candy in the middle.
 Now wrap the dough around the candy until it is completely covered.  Now I like to roll the ball with the palms of my hands until it completely round and smooth.
 Roll the ball into the topping mixture.
Place on a lightly greased cookie sheet.  Bake at 350 degrees for 9 minutes.
Mmmmm, Heaven!
