Christmas Kiss Cookies

It's beginning to look a lot like Christmas.  I can't believe Christmas is right around the corner.  During the month of December, Sugar Sundays will be featuring some of my favorite cookie recipes.  
We're calling it Cookies for Santa.  
First up Christmas Kiss Cookies, a peanut butter cookie with a candy kiss center. These are really easy to make.  I think the hardest part is unwrapping all the kisses, but you can get your kids to do that.


Christmas Kiss Cookies

 Add 1-3/4 cups of flour to mixer bowl.
 Add 1/2 cup peanut butter
 1 teaspoon of vanilla extract 
 1/2 cup shortening (I prefer butter flavored for this recipe)
 1/2 teaspoon salt
 2 tablespoons milk
 1/2 cup brown sugar
 1/2 cup powdered sugar
 1 teaspoon baking soda
 and 1 egg
 Mix all ingredients together until well incorporated.  
Shape dough into balls, using a rounded teaspoon for each.  You can roll each ball in granulated sugar, but I didn't do it this time.  Place balls on an ungreased cookie sheet.  Bake at 375 degrees for 10-12 minutes or until tops are just barely brown.
 Immediately top each cookie with a candy kiss; pressing firmly so the cookie cracks around the edge.

Christmas Kiss Cookies
1-3/4 cups flour
1/2 cup peanut butter
1 tsp vanilla
1/2 cup shortening
1/2 tsp salt
2 tablespoons milk
1/2 cup brown sugar
1/2 cup powdered sugar
1 teaspoon baking soda
1 egg
48 chocolate kisses

Mix all ingredients except the kisses together in a large mixing bowl.  Shape dough into balls, using a rounded teaspoon for each.  Roll balls in sugar (optional) and place on an ungreased cookie sheet.  Bake at 375 degrees for 10-12 minutes or until just barely brown around edges.  Immediately top each cookie with a candy kiss; pressing firmly so the cookie crack around the egde.
