CHOCOLATE OREO CAKE

 How about a HAPPY MONDAY treat? 

CHOCOLATE OREO CAKE
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup butter-room temp
2 cups white sugar
3 eggs
1 tsp vanilla
1-1/2 cups milk
3 oz unsweetened chocolate-melted or 9 TBS cocoa powder and 3 tbs oil

Preheat oven to 350 degrees.  In a medium bowl, combine flour, baking powder, baking soda, and salt, set aside.  Cream butter and sugar together until light and fluffy.  Add eggs and vanilla to creamed mixture and beat thoroughly.  Add flour mixture to creamed mixture alternately with milk, beating well with each addition.  Add melted chocolate (or cocoa powder and oil) and beat till well mixed.

Grease two 8" or 9" pans and line the bottom with parchment paper.  Spread batter evenly between two pans.  Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Let Cakes cool completely in pans.  Using a knife or spatula, scrape around side and remove cakes from pans.  Frost with Cookies and Cream Frosting.

Cookies and Cream Frosting
8-10 Oreo sandwich cookies, creme center removed, and crushed into coarse crumbs.
8 Tbs (1 stick) butter, room temperature
3-3/4 cups powdered sugar, sifted
3-4 Tbs milk or cream
2 tsp vanilla extract

Cream together all ingredients except Oreos until you reach a good frosting-like consistency.  Fold in Oreo crumbs. 

Level cake tops. Sandwich cakes together with some frosting.  Frost remainder of cake.  Top with Oreos and sprinkle with crumbs (optional).

  1. I was wondering what the chocalate dripping down the sides was?

  2. The chocolate dripping is ganache. Most bakeries will sell it to you (they will probably know it as fudge).
