CHOCOLATE PEPPERMINT COOKIES

My sister, Kimberlee, found this recipe in a magazine. It was so delicious, we made 2 batches. The cookie taste the same as the cookie part of homemade oreos. YUM!!

1/2½ C plus 2 tbs butter, softened
1 Cup sugar
1 tsp vanilla extract
1/2 tsp salt
1 egg
6 tbs cocoa powder
1 Cup flour
Beat together butter and sugar salt, and vanilla until combined. Beat in egg. Add cocoa powder and flour til combined. Place rounded tsp of dough onto a lightly greased cookie sheet. Flatten cookie with sugar-dipped glass. Bake 375 for 8 mins or until set. Cool completely and frost (see frosting recipe below) . Sprinkle with crushed peppermint candies, and drizzle with chocolate glaze. Chocolate Glaze: 1 cup chocolate chips and 2 tsp shortening melted together.
(We didn't glaze our and they were still good.)
Frosting:
1/4 cup butter, softened
2-1/2 Cups powdered sugar
1/2 tsp peppermint extract
2-3 tsp milk
Beat butter, powdered sugar, and vanilla extract, gradually adding milk one tsp at a time until spreadable consistency.
