APPLESAUCE OAT MUFFINS



These muffins are pretty good for you and they are DELICIOUS! One regular sized muffin has 222 calories, 6 grams of fat, 2 grams of fiber, and 5 grams of protein.



APPLESAUCE OAT MUFFINS
1-1/2 cups oats
1-1/4 cups flour
1/2 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup unsweetened applesauce
1/2 cup fat-free milk
3 tablespoons canola oil
1 egg white
TOPPING:
1/4 cup oats
1 tablespoon brown sugar
1/8 teaspoon ground cinnamon
1 tablespoon butter, melted
In a large mixing bowl, combine the first seven ingredients. Make a well, and add wet ingredients. Stir until just moistened. Fill muffin cups three-fourths full.
Combine topping ingredients; sprinkle over batter. Bake at 400 degrees for 16-18 mins or until a toothpick comes out clean. DO NOT OVERBAKE!
Yield: 12 muffins
